Sure can, just keep everything within spec.

as in....the amount you take off the PP you take off the outer rim where the bolts go thru.

Correct, IF it needs to be cut a lot. For a small resurface, a couple thou, that isn't needed. If it's severely warped I'd just throw it away as you'll need to take so much off the fingers might wind up hitting the disc when the clutch is fully disengaged. I really wouldn't cut it a lot on a DSM application as the odds are not with you for having a nice clutch disengagement after it's done. It's not really different then doing it to the flywheel if you think about it. Factor how much the pp is cut into your measurement for the step height on the flywheel to make sure you'll be alright.
